Di Pacci — Grind-by-Weight 65mm Flat Burr Espresso Grinder

Eureka Mignon Stark W Coffee Grinder

The Eureka Mignon Stark W puts a scale inside the grinder, so the dose you asked for is the dose that lands in the basket — every shot, from the first bag to the last.

The Mignon Stark W is Eureka's grind-by-weight flagship in the compact Mignon body. It runs 65mm Diamond Inside flat burrs driven by a 320W AC motor at 1650rpm, and weighs the coffee as it falls rather than running the motor for a fixed number of seconds. Eureka's Instant Grind Weighing system holds the dose to within 0.2g, pre-calibrated at the factory so it works with any portafilter weight straight out of the box. An 18g double takes about nine seconds.

What separates it from the standard Mignon Stark is only the dosing system — the burrs, motor and sound-dampened housing are shared. The W adds the load cell, the larger 2.8" touchscreen, the King Size grind dial and a universal fork that holds any brand of portafilter hands-free, and it grows about 30mm taller and 600g heavier to fit the weighing hardware. If you have been keeping a set of scales on the bench next to a timed grinder, this is the machine that takes them off it.

Key Features of the Eureka Mignon Stark W

⚖️ Instant Grind Weighing

A load cell under the fork measures the coffee as it lands and stops the motor at your target weight, so a stale bag or a nearly-empty hopper doesn't quietly shift your dose.

💎 65mm Diamond Inside Flat Burrs

Eureka's patented diamond treatment hardens the cutting edge so the burr geometry — and therefore your grind setting — stays put far longer than untreated steel. Rated to 1000kg of coffee.

🍩 Blind Upper Burr

The upper burr has no screw holes for grounds to hide in, which means less coffee left in the chamber and less of yesterday's bean in this morning's shot.

🎛️ King Size Grind Dial

The oversized stepless collar makes small adjustments feel like small adjustments — much easier to dial in accurately than a narrow ring you have to pinch.

📱 2.8" Touchscreen

Set doses in grams rather than seconds, save your presets, switch to continuous for filter or moka, and lock the screen so nobody changes your settings.

🔧 Universal Portafilter Fork

Takes any brand or size of portafilter, including bottomless, and holds it hands-free while the grinder does the weighing — no cradling the basket under the chute.

Why Grind by Weight Beats a Timer

A timed grinder gives you the same number of seconds, not the same number of grams. That difference is invisible on day one and obvious by day ten, because everything that affects how fast coffee moves through the burrs changes while you use it.

  • Beans dry out as the bag ages, so the same eight seconds produces a heavier dose in week three than it did in week one.
  • A full hopper presses down on the burr chamber differently from one with 40g left, so the dose drifts as you work through the beans.
  • Roast level, bean density and humidity all change flow rate, so every time you switch coffee the timer has to be re-learned from scratch.

The Stark W removes the variable instead of compensating for it. It weighs the coffee during the grind and stops at your target, holding ±0.2g regardless of what the beans are doing, with an anti-vibration mount so a knocked bench or an uneven counter doesn't corrupt the reading. In practice that means less time chasing a moving dose, fewer shots poured down the sink after a bag change, and no separate scale living on the bench.

Mignon Stark W vs the Standard Mignon Stark

These two grinders are the same machine apart from how they measure the dose. Everything below the burrs is shared, so the decision comes down to whether you want the scale built in.

Feature Mignon Stark W Mignon Stark
Dosing method Weighed during the grind Timed — motor runs for a set duration
Dose consistency Held within 0.2g as beans and conditions change Drifts with bean age, roast and hopper level
Burrs and motor 65mm Diamond Inside, 320W AC at 1650rpm Identical — 65mm Diamond Inside, 320W AC at 1650rpm
Display and dial 2.8" touchscreen, King Size grind dial Smaller touch display, standard adjustment collar
Size and weight 410mm tall, 8kg Around 30mm shorter and roughly 600g lighter

Di Pacci recommendation: Buy the W if you weigh your dose now — with a scale under the portafilter, a dosing cup on a bench scale, or by trimming the timer every time you open a new bag. It replaces that whole routine and pays for itself in shots you don't throw away. Don't bother if you pull the same one or two coffees, buy the same beans every fortnight and are happy with the shots you're getting: the standard Mignon Stark has the same burrs and the same motor, makes coffee that tastes identical, and the money is better spent on the machine or on better beans. And if you're spending under about $1,200 all up, the Eureka Mignon Specialita on 55mm burrs is the smarter buy.

Espresso Machines That Suit the Stark W

A grinder at this level is worth pairing with a machine that can hold its temperature and give you something to dial into. These are the Lelit machines our team most often sets up alongside a 65mm Eureka.

Machine Type Why it pairs well
Lelit MaraX V2 Heat exchanger, E61 At 220mm wide it sits beside the Stark W's 125mm body in about 350mm of bench, and its stable HX logic rewards a dose that doesn't move
Lelit Elizabeth Dual boiler, PID Brew and steam at once means back-to-back milk drinks — where a 9-second double dose actually saves you time
Lelit Bianca V3 Dual boiler, flow control Flow profiling only tells you something if the dose is constant; the Stark W removes that variable so the paddle is the only thing changing
Lelit Anna PL41 Single boiler, PID An honest entry pairing if the grinder is the upgrade you're making first and the machine comes later

Who This Grinder Is For

✓ Ideal if you:
  • Weigh every dose and want the scale out of the workflow
  • Rotate through different beans, roasters or roast levels regularly
  • Pull several shots in a row and want a 9-second double
  • Have a machine worth dialling in properly — E61, dual boiler or flow control
  • Want burrs that hold their setting for years rather than months
  • Only have a narrow gap on the bench: this is 125mm wide
✗ Consider alternatives if you:
  • Have less than 410mm of clearance under your cupboards — measure before ordering, this is a tall grinder
  • Mainly brew filter, plunger or pour over, where the Eureka Mignon Zero is better suited
  • Are happy with a timed dose and the same beans each week — the standard Mignon Stark has identical burrs for less
  • Want true single dosing with a bellows and near-zero retention, which is the Mignon Single Dose Pro, not this hopper-fed design

Eureka Mignon Stark W — Frequently Asked Questions

Is the Eureka Mignon Stark W accurate enough to stop using a separate scale?

Yes, for espresso. The Instant Grind Weighing system holds the dose within 0.2g, which is tighter than most people achieve by eye with a timed grinder and comparable to weighing on a bench scale. You will still want a scale for weighing the shot in the cup if you work to a ratio, but you no longer need one to set the dose.

What is the difference between the Mignon Stark W and the standard Mignon Stark?

The W adds grind by weight. Both grinders use the same 65mm Diamond Inside burrs and the same 320W AC motor at 1650rpm, so the coffee itself is identical. The W weighs the dose instead of timing it, adds a 2.8 inch touchscreen, the King Size grind dial and a universal hands-free portafilter fork, and is about 30mm taller and 600g heavier as a result.

Does the Eureka Mignon Stark W need a special power point in Australia?

No. It draws 320W on 230 to 240V and runs on any standard Australian 10 amp power point, so no electrician and no dedicated circuit. It ships with an Australian lead. Worth checking your bench isn't sharing one circuit with a 15 amp espresso machine, though — call us on (02) 9758 0760 if you're unsure about your setup.

Can the Stark W grind for filter, plunger or moka?

It can, using continuous mode and the stepless dial, but it's built for espresso. The 65mm burrs and the espresso-oriented particle distribution are tuned for pressurised extraction, and the weighing system is designed around portafilter doses rather than 60g of filter coffee. If most of your brewing is pour over or plunger, a grinder aimed at brew work will serve you better.

How loud is the Eureka Mignon Stark W?

It's quieter than an equivalent commercial grinder but it is not silent. Eureka's Silent Technology housing damps the motor, and because a double dose takes about nine seconds, the noise is short. Expect something you'd notice in a quiet kitchen early in the morning but wouldn't have to raise your voice over for long.

How long do the 65mm Diamond Inside burrs last, and can they be replaced?

Eureka rates them at 1000kg of coffee, which at a generous 40g a day is well over 60 years of home use — realistically, longer than you'll own the grinder. They are replaceable, and Di Pacci's in-house service team stocks Eureka parts. Regular brushing of the burrs and the chute is the only routine maintenance the grinder needs.

Will the Eureka Mignon Stark W fit under my kitchen cupboards?

It needs 410mm of height, plus room above to lift the hopper lid and pour beans in. The footprint is easy — 125mm wide by 195mm deep — but the height catches people out, so measure from the bench to the underside of your cupboard before ordering. If clearance is tight, a shorter single-dose grinder is the better answer.

Does it work with bottomless portafilters and 58mm baskets?

Yes. The universal fork is designed to take any brand and size of portafilter, bottomless included, and holds it hands-free while the grinder weighs the dose. The scale is factory calibrated to work regardless of the portafilter's own weight, so there's no tare routine before your first grind.

Once proof of purchase has been established, if the product fault can safely and clearly be determined, we will offer you either a refund, exchange or repair. The available remedy will depend on whether the fault amounts to a major failure. In some instances, we may need to consult with the manufacturer or importer to determine the fault and resolution. Most faults can be easily repaired within a reasonable time frame. We will not offer a repair or replacement if the product has been damaged via misuse or abuse. Examples include but are not limited to inadequately filtered water, lime scaling, corrosion due to high chloride ion concentrations in water, operator errors, unauthorised repair work or modification and fair wear and tear.

Whist we understand that many clients would like a loan machine in the event of a warranty item, we regret that this service is not available. We prioritise all warranty work over general repair to ensure the most rapid service possible.

  •     Where there is no fault found, the product will be made available for collection by the customer.
  •     When assessing product fault, it is up to you whether you would prefer to deal with Di Pacci Coffee or the manufacturer or importer directly.
